Vegan crust (& the filling recipe too!)

-1/2 cup coconut butter( won’t use all)
-1cup glutenfree flour
-1/2 cup almond meal/flour
-1 teaspoon xanthan gum
-4 tsp cold water

Mix flours and xanthan gum till blended. Then take clumps of coconut butter and slowly blend in. Once it is turning into a bread crumb like substance add a couple tsps of water so you can make it into a huge ball. Then with some of the coconut butter you didn’t use in the mix, coat an 8 inch pie pan. I like to get messy so I used my hands but you can use the back of a spoon to smooth out the crust. Once it looks slightly perfect( apples were going on it so I said screw it!!) poke some wholes with a fork so you don’t get bubbles. Or if you’re fancy use pie weights. Once it’s atleast slightly brown pull it out. I didn’t let it cool down. Here’s the next part!

For the filling:
I went for a maple walnut flavor but you could use whatever fresh fruit or nuts that you would like.
-3 small/medium apples(I used red delicious organic apples that were small and ripe)
- about 3 small handfuls of raw walnuts I broke up
-2 teaspoons of grade a maple syrup

All I did was cut the apples, break up the raw walnuts , and mix in the syrup. You can add more nuts or more syrup but mine was just sweet enough. The amount I prepared just fit in the pan. After I laid it in there I put some maple syrup in the empty pockets and then sprinkled some more almond flour on top. I put it in the oven for 5 more minutes.
After taking out the pie I think it should be cooled but since I had never made pie I was impatient and wanted to try my creation. It tasted really awesome! I can’t wait to make it again but maybe mix up the flavors. 
For a sweeter crust add some sugar. To make your filling sweeter add cinnamon, sugar, vanilla, honey, etc.

A few months later and…?!

Well folks- I did the 30 days on the De. Schulze juice detox and I went down almost two pant sizes. Since then I have been eating like a vegan and juicing/blending at least for one meal a day, eating no processed foods, and eating as much raw items as possible. It’s not as hard as it seems. On Day 5: going strong!

Whoa. These last few days have been harsh and also amazing! A coworker who turned me on to this whole diet persuaded me to get Dr Shulze’s supplements. Best decision- and I’ll tell you folks why.
Day 1-3: I was only juicing…. And as a hairstylist, on my feet, high emotional & physical energy are a must. I had a headache from withdrawals and that was what was dragging me down the most for sure. But with just juicing it wasn’t cutting it- not when I plan to do a 30-day cleanse. So my coworkers warned me of the issues at hand- hair loss due to calorie deficits as well as feeling like crap due to malnutrition so I ordered the supplements. They don’t taste good at all but will save your day and make you healthier. I encourage anybody who wants to juice 1-3 times a day to get it. It has so many amazing things in there including calories, b- vitamins(energy), and most of everything you need for your day to be successful. (Herbdoc.com)

Day 4-5: After the 3 day hump you are golden. I feel so good- and when I have my lunchtime raw salad I am stuffed. In this diet you also make a yummy potassium broth from certain veggies that you can spice up and it tastes like pho :) I even worked out last night. When you are always drinking and eating you’ll know it because you don’t feel sickly or starving. Also you’ll be peeing atleast once an hour. I should have posted sooner but my mind has been going a mile a minute since I started this due to how chaotic my reality is. Any comments or questions feel free!
Oh also not any really noticeable weightloss but I got 2 compliments on how I looked smaller today. Yay!

Now I am juicing? And eating raw? EEKS.

I think this could be my answer to weight loss FINALLY. I thought that I would lose weight from being gluten-free. I must admit I do look less bloated but I found myself going out of the way to make carbs. I was however trying to eat as much fruits and veggies as possible. As I was prowling on Instagram I came across people with juicing stuff and it brought back my inspiration to finally go get a juicer. So I did. $300 later I got a top of the line Omega and $90 worth of groceries to last atleast 5 days or so. I did get a ton at costco of fruits and veggies that should last me 2 weeks. I took before pictures last night that I am planning to put up in a week or so with pictures of how I look then. 

FOR ALL OF YOU HATERS WITH NETFLIX- Go watch Fat, Sick, and Nearly Dead. It is an eye opener whether or not you will ever juice. It also shows how ignorant people are in this fine country when it comes to nutrition. You can also go to jointhereboot.com(It is the guy from the doc’s website) 

I already tried to eat a microbiotic diet- except for my need for protein. (for those who do not know what microbiotic means, google it) I tend to feel weak and shaky with out protein of some form. If you have read some of my earlier entries I have shared that I cannot eat a good amount of fruits and veggies. When you juice them, you allow your body to process them. I am slowly bringing those veggies back into my diet through juicing. Also I have tried every diet out there, simply counting calories or joining programs like jenny craig. I have always been overweight, I am the first to admit, but I wouldnt say I am obese. I am 5’3 and since my freshman year in High School I have been a minimum of 145 pounds. The only thing that has worked for me was working out 6 days a week while eating 12-1300 calories per day, eating small meals 2.5-3 hours apart. 

Being a hairdresser, I normally have 5 mins to scarf down meals on a busy day. For those who are aware, when you dont chew, your saliva cannot help to break down your already unchewed food in your stomach. Great for your body right? Not only do I not eat enough Fruits & Veggies but I wind up making excuses for work. Best thing about juicing is that you are supposed to SIP your drink, not inhale it. Therefor you are getting little doses of AMAZING vitamins & nutrients throughout your day. Makes total sense to me. Also you do wind up detoxing your body especially for the first week. I will be having coffee withdrawals, and I wont feel my best. Ill update on that as well. :]

I am not trying to preach or force my ways but I feel that this community is growing and more people are becoming aware. So I am only here to share my little amount of knowledge and better myself with this community.

A lil slip up…

I write this to you while sipping on basil soup I made while sickly on my day off… No its not from gluten but I did cheat over the holidays… Over Christmas I ate some gluten. EEKS! Homemade MacnCheese at a friends house & then my moms amazing stuffing were both too tempting. While only having a small amount of both over two days brought back some of my (irritating) symptoms of being gluten intolerant. Was it worth it? Not really. My scalp has been super irritated and my stomach has been upset. While being sick I found a few good items that have helped me feel better. Wolfgang Puck makes some yummy Gluten free soups that are AMAZING. It will say Gluten-Free on the front if it truly doesn’t have any gluten. I didn’t realize that in soup and Chicken Broth they put yeast and wheat flour in them. Seriously there is Glutamate in TOO many things. Read labels my friends because its pretty ridiculous. 

Persistance Returns Results.

Here I am on Week 4 of being completely Gluten Free. I didnt think I could get here but here I am! Only a short month ago I had major stomach issues that I have had for YEARS but also acne on my back and chest. My stomach issues on a scale of 1-10(10 being horrible to 1 being perfectly fine) im probably a 2-3 at ALL times. Also my back went from a 7-9 to a 3-4. I also had embarrassing redness and dryness on my face that is 100% gone. Also any hormonal breakouts I would get didn’t happen this time around if you know what I mean ladies.

Yes my friends- everyone has some sort of gluten intolerance- mine just came out externally and also internally. I can still eat gluten with no immediate consequences but why mess around with my new found liberation? I tell everyone I know because not a single doctor or dermatologist (spoke to about 8 throughout the last few years) suggested any of this to me.

DO your research. DONT be afraid to make a change that can only better you.

The Process of the Fluffy Cupcakes!

Here is the original recipe: The only changes I made were that I made 12 and filled them only about halfway.

Ingredients

  • 3 large eggs
  • 4 tablespoons  of honey
  • 1 teaspoon of baking soda
  • 1 teaspoon of vinegar
  • 1 tablespoon of lemon juice
  • 1/4 cup of oil
  • 1 cup of almond meal

Preparation

  1. Preheat the oven to 350 degrees F.
  2. Separate the egg yolks and whites. Place the yolks in a separate mixing bowl, and then beat the egg whites with the vinegar until stiff peaks form.
  3. To the yolks add the honey, baking soda, oil, and then blend well with a whisk. Next, get ready as you witness the rise of your batter by adding the lemon juice and beating the mixture until well blended. Finally, add the almond flour to the mixture and blend until well combined.
  4. Now fold the whipped egg whites into the yolk mixture until well blended.
  5. Prepare a cupcake pan with baking cups and fill each cup to the top.
  6. Bake for about 17 minutes, or until the cupcakes have risen, and are golden brown on top and springy to the touch.
  7. Cool the cupcakes. As they cool, the top will deflate a bit, but they will maintain their springy, light texture.
  8. Holding a knife at a 45 degree angle cut in a small circle in the middle of the cupcake using minimal force. 
  9. Gently wiggle out the piece that you just sliced. (small triangular cone shape)
  10. Fill with whatever type of filling you would like- In my case, nutella & raspberries, applebutter, and lemon frosting & raspberries.
